A Beginner’s Guide to German Sausages A third-generation butcher walks us through some of the most popular German sausage styles — just in time for Oktoberfest

You don’t need to know a whole lot about Germany to know that the country takes its sausages very seriously. But just

“It’s massive, ” Jeremy Schaller, the third-generation owner of New York City’s famed Schaller & Weber butcher shop, tells . “Basically the biggest protein commodity in Germany is pork. And that goesby tradition. The farmers are always pork. They really just love the product. They woulduse the hog casings or the intestine, and they would have grindersalways in the farms and the little houses, all throughout Germany and the Black Forest andeverywhere. Each region is alittle bit segregated and very different. They take a lot of pride intheir different little areas. They have different dialects, and each town also has their local beer. Every townalmost has their own style of beer and their own style of sausage.And that goes back historically to almost a thousand years ago, and still everybody takes a lot of pride in that.”

Mississippi Holiday Season

Sausage is such a point of local pride, he adds, that it’s almost akin to sports rivalries between cities here in the States. “Everybody thinks their sausage and their beers are better thanthe other towns’, ”he says.

With so many excellent local varieties, then, it’s a shame that what gets passed off as a German-style sausage here in America is so often inauthentic and inferior. “Companies like Johnsonville and Boar’s Head, it’s so different than my grandfather’s recipe is because it’s been so Americanized, ” Schaller explains. “They’ve added more sugar. They’readding fake smoke to a lot of the products like that. Just because they feellike that’s what the American market’s going to like, but that is not a realbratwurst like that you’d have in Munich or anything like that. So I feel likethat’s kind of bastardized a lot of it and in a way it gives it a bad misconception because people with a really good palate would not eatthat kind of food. So yeah, I wish that was just more traditional, the realway.”

Of course, you can find the real deal here in the States if you know what to look for. With that in mind, we asked Schaller to walk us through some of the most popular types of German sausages (and, yes, one’s technically Austrian). He gave us the nitty gritty on what they’re made of, how they’re traditionally prepared and what side dishes you can pair them with, just in time for you to get your own at-home Oktoberfest celebration in under the wire. What To Do In N.y.c. This Weekend: March 6th 8th

Brats are easily the most well-known German-style sausage.“It’s what we call a white sausage, so it’s made of pork and veal, ” Schaller explains. “Thewhite sausage is not a smoked sausage. It’s just a fully cooked sausage. The bratwurst is a coarser grind. We do ours with nutmeg and a little bit ofmarjoram, and it’s pork, veal, and it’s a natural hog skincasing. Ours is our original recipe, which was brought here by my grandfather 84 yearsago from Stuttgart and he worked for a butcher out there, fully trainedsince the time he was 15 years old, and he kept the same recipe whenhe came here. The only difference is we made ours antibiotic-free and all-natural, but those are the only variations we’ve ever done to it since we startedas a company 84 years ago. That’s what you’ll find in Munich and Bavaria at Oktoberfestalong with a couple others, but that is clearly the most widely known.”

Here in America, we traditionally eat them on a bun with mustard and sauerkraut, but the authentic German version is more specific. “Specifically you would use what in Germany they call a Dusseldorf-style mustardwith that, which is horseradish mustard and sauerkraut, ” Schaller says. “You could also do the red cabbage, you could do a white cabbage with it. In Germany, they would never do itwith a bun. Here, obviously, that’s changed a lot. Obviously, any German sausages are paired well with a pretzel as well. So that is somethingelse that you could do. Red cabbage, cucumber salad, potato salad, potato pancakes. Thoseare all great sides for any of these kinds of sausages. Bread dumplings too, roastedpotatoes sometimes. But those are the traditional pairings.”

“The bauernwurst is a country-style sausage, ” Schaller says. “We do ours with whole mustard seeds in it.That is not a white sausage; it’s a red sausage, whichmeans that it’s smoked. We smoke ours with natural Hickory smoke, also ina hog casing. A coarser grind, because bauernwurst, basically means “country-style.” So, traditionally, theywould make these in the country using a small sausage grinder. So that’s whyit’s a coarser sausage, and the farmers would like make these in their countryhouses and farms.”

It’s made with pork, beef, pepper and garlic, and while it also pairs traditionally well with mustard and sauerkraut, it also turns up in French food occasionally — specifically in the Alsatian dish

“Knackwurst is a fine-emulsion smoked sausage, ” Schaller notes. “Again, smoked with Hickory natural hog casing. It’sbasically like a plump wiener or kind of a hot dog, but in Germany they’re always referred to as wieners. It’s plump. A lot of peoplewill cut it up [into] small bites, and it can be used forcurrywurst as well. And thatagain is a fine emulsion, so it’s not coarse at all. It’s more like thetexture of like a hot dog.”

It’s made with pork and beef, and as Schaller mentioned, you’ll frequently find it steamed, fried, covered in curry ketchup and served as a popular street-food dish known as currywurst. Some currywurst variations also include paprika or chopped onions, and it’s typically served with fries. (“In Berlin, there’s two kinds of currywurst, ” Schaller notes. “The ones basically from East Berlin would be skinless currywursts, and the ones from West Berlin would be skin-on currywurst. It’s because in East Berlin, during the communist era, they couldn’t really afford the hog skins, so they made it like a little bit of a more efficient kind of style.”) Outside of currywurst, you’ll also find knackwurst on most traditional

“Weisswurst is the very, very traditional Bavarian — specifically from Munich — sausage, ” Schaller says. “Traditionally, you’re supposed to make them fresh in the morning and cook them only before 12 noon and then serve them boiled in a little serving bowl, usually two in a bowl. And then that bowl will come out with a side of Bavarian-style sweet mustard and sauerkraut and a pretzel. And that’s traditionally how it’s supposed to be packed and served in Germany. When you eat it, you have to cut the skin off. That’s the only one where it comes with the skin on and you would cut it off. And it’s to be boiled, never grilled or anything like that. Grilling it is a big faux pas.”

Weisswurst is made from a mixture of pork and veal, as well as parsley and mild spices. It’s a staple of traditional Oktoberfest celebrations, so even though you’re technically supposed to be eating them before noon, you shouldn’t be shy about pairing them with a nice German beer.

As you might have guessed from the name, the Nürnberger bratwurst hails from the city of Nürnberg. “It’s more like what we know in America as a breakfast-style sausage, ” Schaller says. “It’s thatsize. It always has the marjoram in it. That’s the main spice ingredient. It’s a coarser grind as well”

And it comes like a pudding. That’s why alot of times it’s referred to as a blood pudding. It is made usually traditionallywith pork blood, and it has a lot of very peppery flavor toit. It’s also served traditionally with onions. And then there is the slicing blutwurst, which ismore like a cold cut, and it’s meant to be served cold. When Susan Nicholson was found dead on her sofa in 2011, the police decided it was an accident, even though a previous partner of her boyfriend, Robert Trigg, had died in similar circumstances. Why did her parents have to fight such a long battle for justice?

E arly on the morning of 17 April 2011, Robert Trigg left the flat in Worthing that he shared with his girlfriend, Susan Nicholson, and walked to the newsagent for a pack of cigarettes. On his way home, he lit one. Then he called his brother Michael and told him that Susan was dead.

Michael urged him to call the police. Instead, he called a neighbour, Hannah Cooper, and told her the same thing. Cooper also said he should call the police. In the end, she stood with him and made the 999 call on his behalf. Much later, the police released the audio recording of the call. “He phoned me just now, saying: ‘I think Sue’s dead, ’” Cooper tells the dispatcher. “So I’ve come down and he says she is.” She then asks Trigg what happened. You can hear him in the background of the call. “I think … could be suffocation, ” he says. On the recording, his voice is flat and expressionless. He sounds like a man in shock, struggling for words.

When the police arrived, Trigg told them a story. At the end of a night of heavy drinking, he and Susan had fallen asleep on the sofa, he said. He had woken up to find himself on top of her. Her face was purple. He thought she was dead, he told the police. But he panicked and so went to the shops.

There were no signs of a struggle, and panic makes people do strange things. Trigg’s story seemed to be consistent with Susan’s condition. Two days later, the pathologist, Simon Poole, conducted a postmortem and his findings confirmed it: the cause of death was likely to have been a mix of accidental smothering and the effects of intoxication. The police concluded that the death was not suspicious.

Six years later, sitting in the front room of their seaside home in Worthing, Susan’s parents, Peter and Elizabeth Skelton, remember the moment they learned of their daughter’s loss. It had fallen to their grandchildren – Joseph, now 30, and Marc, now 28, from Susan’s previous marriage – to give them the news. “The police had told them their mum had died in her sleep, ” Peter says. “We just had to believe it. We were devastated.”

“You think: ‘That can’t be true, ’” Elizabeth says. “And you think back to when you saw her and she looked fine. Why would she be dead?”

Surrounded by pictures of their beloved grandchildren, the Skeltons speak quietly and thoughtfully, taking their time with each answer. They are 81 and 82 now and seem stoical in the face of loss. But, occasionally, their eyes glaze over. If they seem a little absent in these moments, it is easy to see why. The question of why their daughter died took far longer to answer than they could have expected – and came at a far greater cost.

Susan Nicholson’s life had not been easy in the years before she died. After a decade working at banks and a utility company in London and Sussex, she had moved to Worthing to be with her husband, with whom she would have Joseph and Marc. But the marriage broke down and she started to drink heavily. In 2010, she went to a rehabilitation clinic, where she met Trigg. By the end of the year, things seemed to be looking up. She bought a flat and her new boyfriend moved in. He even met her parents – only two or three times – but he seemed friendly, the Skeltons say.

But after Susan’s death, something about Trigg bothered Peter and Elizabeth. He was 5ft 9in, with a large, imposing frame, and weighed 15st. And they had seen the sofa. It was small – far too small for the couple to sleep on together, they thought. It just didn’t make sense.

Elizabeth phoned DI Sarah Barrett, one of the officers who had attended the scene. “I said, ‘Have you seen the width of the sofa?’” she remembers. “There’s no way two people could sleep on that sofa.”

They pushed the detective, Elizabeth says, for an answer. But Barrett’s mind was made up. And the postmortem’s conclusions were clear enough. On 14 October, they buried their daughter. Even with an inquest still to come, the case of Susan’s death had been closed.

And then, a couple of months later, just before the inquest, the Skeltons were told something that would change their lives. Police informed them that Trigg had been cautioned for assaulting Nicholson. But, more disturbingly, they were also told that years earlier Trigg had been in a relationship with a woman who had died suddenly in the bed they shared. And the police knew about it.

On the day she died in early 2006, Caroline Devlin, who had moved to Worthing from Scotland with her four children, had something to be excited about: she was about to start a job at the probation service. Her children – Jordan, 14, Codie, 10 and Brandyn, nine – wanted to do something for her. It was Mother’s Day and they were planning to make her breakfast.

The family shared a house with Trigg, who Devlin had been with for a couple of years. But when Jordan came out of his bedroom, he found Trigg sitting at the top of the stairs leading to their loft bedroom, fully dressed, clasping a cup of tea. Trigg casually told the boy: “There’s something wrong with your mum.”

Trigg stayed where he was, drinking his tea, as Jordan went past him into the bedroom. He found his mother lying face down with her head at the bottom of the bed, naked. He tried to wake her up. But she was cold and her face was blue.

The police arrived soon after. They knew that Trigg had been cautioned for assaulting another former girlfriend, Susan Holland, whom he had dated in 2003. But they did not see Devlin’s death as suspicious. A postmortem at Worthing hospital by Barbara Borek, a forensic pathologist, concluded that the 35-year-old had died of an aneurysm. The death was put down to natural causes, and no inquest was held.

Trigg stayed on at the house for a short time and then disappeared from the lives of the children Devlin had left behind. It would be another four years until he met Susan Nicholson. When he did, he started abusing her within a matter of months. This was recorded, too. Hannah Cooper, the neighbour who called the police when Trigg told her that Nicholson had died, had made several calls to Sussex police reporting disturbances in Nicholson’s flat.

At least one of those calls was serious enough to set alarm bells ringing. On 26 March 2011, Cooper told the police she could hear trouble from Nicholson’s flat. When officers arrived at about 11.30pm, they found Nicholson with visible injuries to her face – two black eyes and a swollen nose and mouth. She had bruising to the top of her chest and a cut on her right arm. The next day, Trigg was cautioned for battery. But no one made a connection to what had happened to Caroline Devlin.

Even at Nicholson’s inquest, no one questioned the manner of Devlin’s death. She was mentioned, and a single incident of violence against Nicholson was briefly discussed. But there was no reference to the attack that had been bad enough to put Holland into hospital for three weeks.

At the inquest, Elizabeth Skelton told the coroner, Michael Kendall, she could not accept the conclusion. The couple questioned the size of the sofa and challenged Trigg over his violent behaviour. “I just have to say we’re not at all happy, ” Elizabeth told the coroner. “I don’t think the truth has been told at all.”

But Kendall was unmoved. He told the Skeltons: “I’m sorry the proceedings don’t dot every ‘I’ and cross every ‘T’ and that’s very unsatisfactory for both of you, but, as far as my jurisdiction is concerned, I feel that I’ve heard the evidence that I need to hear.” He recorded a verdict of accidental death.

The Skeltons say they felt as if their own daughter had been put on trial. References to Susan’s drinking and patchy employment history were made. “But she wasn’t there to defend herself, ” Elizabeth says. “We knew it was a sham. It really was.”

Faux Pause is an American television program that aired in 1998 on Game Show Network. Co-hosted by Mary Gallagher and Sean Donnellan, Pause consisted of jokes and skits done while watching certain episodes of game shows, in a similar fashion to Mystery Scice Theater 3000.

In 2001, a massive change in both leadership and programming at the network took place wh Liberty Media acquired a 50% stake. Both presidt Michael Fleming and vice presidt Jake Tauber departed, and former ABC Family/Fox Family Channel presidt Rich Cronin was hired to head the network.

On March 15, 2004, Game Show Network began using the abbreviation "GSN" and introduced the tagline "The Network for Games." GSN began expanding its programming to include reality television games and various competition-based programs.

Although DirecTV nominally remained the majority owner, it had ceded control of the network to Sony, and had the right to force Sony to increase its stake in GSN to 58%.

Famous And Popular Game Show Hosts Throughout History

In April 2017, David Goldhill stepped down after nearly 10 years as GSN presidt, the longest ture for any presidt to date. He was succeeded by Mark Feldman in August 2017.

By 2018, the network's programming returned to focus on traditional game show formats, culminating in a rebranding that restored the network's full name.

The network's daily schedule would consist almost tirely of original programming, including new shows like America Says, Common Knowledge, and People Puzzler.

Media Censorship In China

In April 2020, Game Show Network re-introduced Master Minds, a retool of an earlier original show called Best Ever Trivia Show featuring Jeopardy! champion K Jnings, and now hosted by the returning Brooke Burns of the GSN version of The Chase.

A list of 2020 Niels ratings published by Variety indicated that Game Show Network averaged 432, 000 viewers in prime time, up 6% from the 2019 average.

In December 2021, Mark Feldman resigned after four years as Game Show Network presidt, to join the video game firm Scopely amid the gaming unit sale from Sony. He was succeeded by longtime executive John Zaccario.

Sonic Colors: Ultimate

On September 7, 2022, Dish Network and Sling TV removed Game Show Network from their lineups, after failing to reach a rewal agreemt with owner Sony Pictures Television.

Currt original programming, as of April 2023, includes Master Minds, America Says, Switch, Tug of Words, People Puzzler, and Chain Reaction. Other shows airing on the network include Catch 21, Match Game (hosted by Ge Rayburn), Family Feud (hosted by Steve Harvey), Deal or No Deal, Funny You Should Ask (2017), 25 Words or Less, Cash Cab, Who Wants to Be a Millionaire (original ABC prime-time run hosted by Regis Philbin), and the 2016 version of The $100, 000 Pyramid.

GSN began syndicating some of its original programming to other channels in the early 2010s. On June 24, 2013, the channel tered into an agreemt with Bounce TV, giving it the broadcast rights to The Newlywed Game, Catch 21, and The American Bible Challge.

Recently I have noticed a truly gorgeous light fixture popping up all over Instagram. It’s gorgeous, sophisticated, a little edgy and REALLY expensive! Dang, hopes were really high as I followed the links to Rejuvenations website only to discover my dream light fixtures would cost me my first born and my right arm. Ok, maybe not my first born, but definitely a few appendages. DANG!

But wait… I am Corey freaking Decker. I can figure this out! Thus began a slow shopping trip that included every isle of Home Depot. I could figure this out. I just needed to think outside of the box.

After browsing every isle of every department of The Home Depot I had an idea. An idea that included a conduit coupling! Electrical department you have saved me again. An electrical coupling would totally work for the junction point on the light fixture, right !?

Converting the coupling into a junction point was definitely the trickiest part of this project. I needed this small piece to hold the metal arms in place and it also needed to stay suspended on the rod, but I had a plan.

Did you know you can drill into metal? You can, in fact it is a fairly simple process. All you need is a drill bit intended for metal. I was planning on using 1/8″ welding metal rods for my arms so I used a 1/8″ metal bit to drill holes right through my conduit.

Incase you are wondering what the contraption in the above picture is, it’s a drill press. It is definitely handy, but not necessary. You can easily use a standard drill for this step. The important thing is to make sure that you drill 4 evenly spaced holes are on the lower half of the coupling.

Have you ever heard of a set screw ? It is a nifty little piece of hardware that will make this project possible! Basically you can thread your own hole and use a tiny set screw to create tension. So let’s get started!

Adding a set screw will require some new tools, we will be using a drill and tap set. I already have a full set, but if you just need the tool for this project I would suggest either the Dewalt Drill Tap Combo or Drill, Tap and T-handle set.

Dewalt Drill Tap Combo– I have never actually used this but have heard good things. It is a drill bit that both drills and then taps/threads a hole. Again I cannot vouch for this system but it seems like a great concept.

Rejuvenation Lighting & House Parts

Drill, Tap and T-handle set– This is the same basic style of system I used. It comes with a drill bit, which you follow-up with a tap that threads the hole. It comes with a hand grip that allows you to hand drive the tap.

Just as before, I would need to drill two holes for my set screws in the coupling. To do this I used the 1/4″ drill bit . (This is included in both of the above mentioned kits.) These holes will need to be evenly space on the upper perimeter of the coupling. To make things easy on myself I simply drilled directly above my existing holes. Again, I used my drill press to make short order of the job, but it can easily be done using a standard drill.

Once both 1/4″ holes are drilled through the coupling I am ready to thread it. In order to thread the hole I will need to use the tap bit. In the kit I used, I insert the coordinating tap pit (1/4″) into the hand tool. When threading a hole you will insert the tap in the pre-drilled hole. The key to threading properly is take make sure you are level, and drive/twist the tap in slowly. It will take a little bit of muscle.

Next it is time to create the arms/supports. To do this I used 1/8″ x 36″ welding rods. To start I created a small “U” shaped hook at the bottom of four rods. These will hold/hook the bottom of the lamp shade.

(As a point of reference my lamp shade is top diameter is approximately 10″, the base diameter is approximately 16″ and the height is 14″.)

In order to create identical rods I would HIGHLY recommend creating a jig. The dimensions for a jig will be dependent on the size of your lamp shade. Before you create a jig, hook the “U” shape under the edge of your lamp shade, once the rod is in place mark where you think the bend in the rod should be. (As a point of reference my lamp shade is 13″ tall and my rods are 19″ from the end of the “u” to the bend.)

The jig is simple to create. It consists of 3 screws, a platform, and a straight edge. The goal is to hook the priorly created “u” on a single screw. This will hold the rod steady and will also help in continuity in the length of all the arms.

There will need to be a second set of screws that the straight end of the rod will slide through. This will be the bending point in the rod. Again at this point I would hold the rod up to your lamp shade and see what feels right for the angle of the bend. Originally, I bent mine about 90 degrees, but it looked a little harsh, so relaxed it to more of a 105-ish degree. No matter what angle you settle on, mark the angle on your base board and make sure you use it as a template for all the rods.

Alright, once the arms have a “u” hook, and elbow/bend we are ready to make our last reference to your lamp shade and rod. Hold the rod in place and mark where the rods will need to be cut in order to connect to the center rod and accompanying coupling.

If you want to play it safe you can first assemble your light fixture and install the coupling and then measure the distance you need from the elbow to the coupling.

Regardless of the measurement, make sure you mark all of your rods together. These all need to be identical for this to work. I used a sharpie to mark my rods.

Before beginning the assembly process I spray painted all my components in a matte black. This will include your light fixture kit, the rods, and the coupling. (This could look absolutely stunning in a brass finish!

After the pieces have had adequate time to dry, it is time to assemble! Most light fixture kits disassemble as seen below. Thread the wiring through the circle in the center of the spider like legs that support the lamp shade. After, thread the wires through the accompanying rod, then screw them together.

Next we will add our modified coupling to the rod. Tighten the setting screws so that the coupling will not slide freely on the rod. ( This is a temporary placement, so don’t tighten it too much, it may scuff your paint job.)

Now it is time to add the arms. While the arms are designed to fit snuggly in the previously drilled holes, I need to give them a little help. RapidFuse is just the ticket. To put it simply, it is like a SUPER glue for all sorts of surfaces, including metal surfaces! This will give the arms the staying power that this light fixture needs.

How To Customize Your Light Fixture

A small dab of DAP RapidFuse is all that is needed. Just add a small amount to the interior of the pre-drilled hole intended for the arms/supports. Promptly after applying the glue insert the first support. When doing so ensure that the arm is sitting straight. You don’t want wonky arms!

After each of the arms are snuggly fit and secured it is time to finish assembling the light fixture! Add the remaining/desired light fixture rods and the mounting plate. ( You can use the directions included in your light kit if further details are needed.)

Remember how I mentioned that the set screw would only be a temporary hold? Now that all the arms are in place, loosen the set screws and if needed adjust the placement of the coupling. Ensure that all the “U’s” on the end of the supports are hooked under the bottom ledge of the lamp shade. Once the arms are sitting in place tighten both set screws tightly.
